That sounds lovely and I may have to give it a go although I must confess that up to now I've cheated with my marmalade and used the 'MaMade' tins of pre-prepared fruit. I used a jelly bag and stand to strain the cold liquid – as I had one, I thought I might as well get my money’s worth – and it was brilliant, really easy. Next day, leaving the bag in the pan, bring the liquid to the boil, then simmer for about 1 hr, or until the peel is soft and translucent and the liquid has reduced by one third.

Bring back to the boil and boil the marmalade for 25-30 minutes, stirring occasionally to prevent it sticking.Instead of hours of slicing, juicing and stirring it takes just over an hour to make 7-8 pots of delicious marmalade. I made this recipe yesterday and so many things felt wrong - the amount of liquid; boiling the whole fruit first; not putting the flesh in the muslin with the pips; and putting the lemon peel and flesh in. Warm your jars if they’re not already sitting in the dishwasher and ladle or pour the marmalade into them (I find a small jug is easiest for this). Am going to try the above recipe with lemons, but any advice from anyone with experience making lemon marmalade please let me know.
