About this deal

FoodSaver Vacuum Sealer Machine FM2000: This model doesn't have a pulse or gentle setting for delicate foods and was explicitly not recommended for use with wet items. It often “walked” on the table during use.

FoodSaver is a brand focused exclusively on vacuum sealers, and it makes a lot of good ones. In fact, there are three different FoodSaver models on this list! The FM2000 is the brand's middle-of-the-road option, a unit with lots of power but a slim, lightweight design that can be stored vertically or horizontally. It carries a moderately high price tag, but it's exceptionally easy to use and has some convenient features. To test dry mode, we used dry basmati rice and dry pinto beans and evaluated how much air remained. Items sealed in dry mode should be so empty of air that the bag feels hard. Though bulkier and less attractive than other models, this machine is about as close to commercial-grade as you can get for sealing large quantities of meat. It's a real workhorse with a 680-watt, fan-cooled motor that prevents overheating even during heavy use. But thanks to an intuitive control panel with one-touch operation, it's simple enough for novices to use. Though we have not tested this model in the Lab, we like that it can even handle 11-inch-wide bags for large hunks of meat — ideal if you like to sous vide brisket or pork butt.

It's cocktail time: The infuse/extract function

Bag storage and a cutting feature can make using a vacuum sealer even easier. We often prefer a model with storage capabilities, as the bag roll doesn’t take up additional space in your kitchen. Efficiency is critical here; the ability to cut the bag with the vacuum sealer saves time and increases the accuracy of your cut. Pause between sealings. To prevent overheating, wait up to a minute (or the amount of time specified by the manufacturer) between sealings.

Putting the chamber vacuum sealer to the test

Greg Baker is a former chef and restauranteur with more than 40 years of experience in the industry. He tested the Anova handheld vacuum sealer for this review. FoodSaver's V4840 is a machine for a serious food...saver. It offers basically all the bells and whistles one could want in a vacuum sealer, including onboard bag storage, a removable and dishwasher-safe drip tray, a built-in handheld sealer, dry and moist modes, and automatic detection that senses when the bag is in the right position and starts the process all by itself. To determine the best model for any occasion, we tested 23 vacuum sealers. These ranged from handheld to countertop models — some very simple and some that felt more professional in style. The tests consisted of an initial sealer setup, evaluating the number of accessories and bags each machine had, settings for moist or dry foods, and suction power.

We also recently evaluated a new handheld model ( from Anova) and found it worked well enough to be added as a winner.One thing I do miss is the cutter on the old machine. With new machine, you have to cut bag with scissors and the cut has to be very straight or the bag will not evacuate. This is our favorite compact model, but it also performed exceptionally well during our testing. All the vacuum bags we sealed were tight enough to leave no air bubbles and stayed sealed throughout our tests. It has a super short refractory period of only 20 seconds, and the design also features a removable drip tray. If you’re looking for convenience, this is a perfect vacuum sealer for your kitchen. I was able to handle fresh-out-of-the-oven rolls after a 30-second cycle in the vacuum sealer. They're more versatile and provide longer-lasting results since there's no port, which could allow air to escape or enter. Most can also re-seal bags, like potato chip and cereal bags. The best vacuum sealers are slim and can seal both dry foods and liquids, as well as pulse and seal. But it's worth considering the following factors when looking to buy:
